Julien Altaber may not have come from a winemaking family, but he was determined not to let that overcome him. He began Sextant in 2007 after he gained access to organic grapes from a well-known grower in Burgundy – an opportunity not common at the time. The name Sextant means “to stay the course and not lose your way”, referring to the dedicated approach of natural winemaking to which Julien adheres.
Po à Po is 100% Aligoté from a north-facing vineyard on clay-calcareous soils near the prestigious village of Pommard. The vines are farmed with biodynamic treatments and without the use of chemical products. Half the grapes are destemmed and macerated on their skins for 12 days before pressing. Fermentation is natural and the wine is aged in old barrels. The élevage is one of a hands-off nature, without any added sulphur, and is bottled unfined and unfiltered.
It demonstrates a well balanced example of Aligoté’s affinity for making skin contact and orange wines, with a textural component and slight bitter touch on the finish.
