Making only twenty cheeses a day the producers make a particularly fine, moist, pronounced paste. A hard, rich, nutty cheese aged for 23 months allowing more development of flavour while maintaining it’s smooth texture.

All of our cheeses are cut fresh to order. We aren’t robots, so weights will vary slightly from what you may have ordered. We shall of course do our best!
