The creamery works with over 60 local herds, which average 70 Normande cow’s. Small amounts of starter culture are added to partially skimmed milk and left to ripen overnight at 30C. The cheeses are then hand-ladled from small basins of curd and drained on reed mats. An elegantly subtle camembert with complex flavours ranging from vegetal, buttered spring greence to more ethereal, sea-side qualities.
